Years ago, virtually no mochi made it to stores, even if it was “organic,” and fresh from the farmer’s hands. That’s because most of the country’s 9,000 mochi makers are concentrated in Shizuoka, in Japan’s western half.

In the past, when farmers started selling their fresh mochi, the handmade product would often have been left in baskets outdoors and, within a few days, carried by donkeys over roads to nearby towns, where it was sold in what is known as the inari-handi (“mochi handi” in English) system.

But these days, because the price of a round of mochi has risen and they’ve had a hard time competing with large-scale producers of packaged mochi — think agri-business — most farmers aren’t using donkeys anymore.

They’re selling directly to nearby factories, which turn out massive batches of mochi all at once. The farmers’ profit margin is almost non-existent. It’s about as little as a farmer can make on the cost of producing a single piece of mochi.

So farmers have begun seeking alternative ways to get mochi to stores.

One big supplier, Kyoto Mochiko, has “shopped” the mochi that farmers had sold to donkeys to local retailers for years. The company now uses 18 trucks, mostly GMC Suburbans, to transport mochi.

“I can’t really compete with other companies,” says Tsuneo Yoshimori, a 70-year-old farmer who rents a 3.5-acre farm in Matsue City, near Tokyo, to make mochi.

“They buy 1,000 mochi a day from me, and they are the only one to buy them,” he says.
